Chardonnay: clean, crisp and light in fruit and body with a nice apple nose. Finishes buttery with a hint of oak. Excellent with a robust olive oil on mixed greens, a good poaching addition for chicken or fish and this vinegar makes your hollandaise the best. Substitute for champagne vinegar.
